Let Thy Garden Feed Thee (Yum,Yum!)

The Thirsty Thursday topic for August is...Harvest Time. This morning my garden offered Swiss chard, yellow crookneck squash, baby beets, beet greens, and bell peppers. I picked plenty of greens to eat right away and store for future use. Handfuls of Swiss chard were snipped, washed, blanched, and frozen for winter soups and stews. Tasty greens are my edible wonders that not only make my taste buds happy, they also promote good health. Leafy greens are an acquired taste – there are milder varieties such as baby spinach, parsley, or cilantro that can be chopped and ‘hidden’ in sauces, layered in lasagna, added to salsa, rolled in wraps, or wilted in stir-fry. Be brave – try a new green even if you need to hide it.

Hippocrates, the Father of Modern Medicine said, “Let thy food be thy medicine, and thy medicine be thy food.” Dine well my friends – your fork is a powerful tool towards improving your health and well-being. Get creative and eat your greens.  ☺
