Thanksgiving...Shifting From Tradition

Happy Thanksgiving! Many of my Health Coaching clients and readers of my book had reached out to me and asked how I maneuver the holiday season since I have broken with tradition. Let me tell you a story…

I celebrate Thanksgiving with family. We will enjoy each other’s company, play games, laugh, talk, and yes…there will be a feast. Long before I opted into my current plant-based way of eating I had gradually steered away from eating a traditional turkey dinner. Childhood memories of my grandmother’s homemade rolls, pieces of honeycomb from my grandfather’s beehives, my mom’s delicious turkey stuffing, and my own deviled eggs were goodies my family enjoyed for years. Though things change, people change, and taste buds change. And that’s okay.

My maternal grandmother experienced macular degeneration. When she ultimately lost her eye sight and ‘went dark’, as she called it, she naturally lost interest in baking. Construction of the I-15 freeway in Draper, Utah took place through my grandfather’s property. Grandpa sold the bulk of his farm and gave up his beehives. My father developed an allergic reaction to eggs and many people in my family, such as myself, had dangerously high cholesterol levels. So, rolls are easily purchased or can be baked by others, I haven’t eaten honeycomb for decades nor do I miss it (bees have a use for it, my belly does not), and just over four years ago I changed my way of eating to better manage my health and lowered my cholesterol. Throughout these changes one holiday tradition has remained the same…

The tradition of spending time with those I love, regardless of the types of food on the table, is how I celebrate Thanksgiving.

This year, my extended family travels to Montana to visit my nephew and his family. My son and I will celebrate at his home feasting on a nacho bar, my homemade oatmeal raisin pecan cookies, and a big bowl of strawberries.

Wherever you are, however you celebrate Thanksgiving (or not), and whatever types of dishes grace your table today (traditional or not so traditional)…Dine Well and enjoy yourself!

Vegan (and Omni) Prep for Day of Thanks and Gratitude...

In one week I celebrate Thanksgiving with family, as is customary in my neck of the woods. The how, the when, the where, and the why we choose to celebrate this holiday has changed dramatically over the years, and for a number of reasons…

  • I am an empty-nester, my extended family has grown and gone

  • Each of my grandparents have passed away

  • My retired parents would prefer to gamble at a nearby casino and dine at a buffet rather than bother with cooking

  • Some of us work multiple jobs and odd hours

And then there’s me…who has very particular tastes and am the sole person in my circle of family and friends who has adopted a vegan *whole food plant-based oil free diet (*WFPFNO).

My family and friends are accustomed to, and fully support, my dietary preferences. In my resource guide and website I share my experience and failures following trends and fad diets over the course of my adult life. This is not a new story, since many of us struggle to find a diet that is successful. My current meal plan evolved over time. There was plenty of trial and error, time and effort spent educating myself, and ultimately I discovered The McDougall Program while watching the film Forks Over Knives. I learned about the work of Dr. John McDougall (author of books like The Starch Solution) and T. Colin Campbell (author of The China Study). With this introduction I dramatically changed my way of eating and transformed my life on multiple levels.

Today, and in the week ahead, I am expressing heartfelt thanks and gratitude to the aforementioned pioneers, who practice what they preach, and help others understand the science of nutrition. By following their recommendations I sleep well and wake-up refreshed, I manage arthritic and artificial joint pain without prescription medication, and my overall health has improved dramatically. The bottom line is that I can honestly say that I feel good on a regular basis.

As someone who has faced a near death experience, being able to honestly state those realities about my current state of health is something that I am very thankful for.

Wherever you are, however you celebrate Thanksgiving (or choose not to), and whatever types of dishes grace your table, dine well! We are each in charge of our own health status and have the ability to improve our current state of health simply by improving our diet, exercising, and better managing stress.

Healthier Caramel Apples, Stuffed Pumpkins, and More!

Happy Halloween!

Today I’m celebrating one of my favorite holidays! I adore the decorations, watching old spooky movies, carving pumpkins, and dressing up to hand out candy on Halloween Night. One of my clients recently asked if candy is a temptation for me. My answer is both yes and no. Since adopting a whole food plant-based oil free diet my cravings for refined sweets has practically disappeared. Most importantly, I do not miss the health consequences of eating processed junk food. Do I still enjoy a sweet treat occasionally? Of course! Earlier this week I treated myself to a celebration dinner after learning that my employer, The Kura Door, had awarded me with a very generous raise. My celebration feast included…

  • A large bowl of Greens and Garlic Lentil Soup, topped with fresh salsa

  • 6 Corn Tortillas cut into wedges, baked, dipped into BNV’s Amazing Cheese Sauce

  • Dessert = 1/4 cup pomegranate seeds and 1 T. Enjoy Life vegan dark chocolate chips

My dinner was delicious, satisfying, and best of all…I didn’t gain any weight, I didn’t experience indigestion, I slept well, and felt full without feeling stuffed. If my meal sounds like a great deal of food, you’re correct, it was. The joy of focusing on starches and other plants means that I feast on low calorie quality foods. Holiday Meal Planning and Recipes from Mary McDougall includes recipes like a Holiday Stuffed Pumpkin, Creamy Pumpkin Soup, and a Wicked Chocolate Pie!

Healthy & Haunting Desserts from Forks Over Knives offers a healthier version of a caramel apples and pumpkin pie squares! I’ve made apples covered in a date paste mix which is divine (plus, the date paste version doesn’t stick to my bridge or hurt my teeth the way traditional caramel does). The recipe you’ll see on this link uses peanut butter…though still a bit rich for me. I would substitute and use PB2 powder instead of peanut butter to further reduce the fat content.
