On Sunday, May 22, 2022, I was invited to join a potluck luncheon at Sugarhouse Park held by Plant Based Utah…the organizations first in-person event since COVID. This chance meeting and last minute invitation was a delightful surprise for me. The last time that I sat alongside a large number of individuals who follow a plant-based diet was in 2016 when I attended a 3-day intensive workshop at The McDougall Foundation in Santa Rosa, CA.
A big thank you goes out to Chandler Rosenberg (shown), Marketing Director of Plant Based Utah and cofounder of Save Our Great Salt Lake…this is the woman who graciously responded to my 5:00am email sent that very morning. I reached out simply to introduce myself, ask how I could participate, and offered to donate a copy of my book to Plant Based Utah as a show of good faith. By 8:00am, Chandler had responded to my email, accepted my donation offer, and invited me to the event. What a treat! Thankfully, I had finished my workout and had enough items on hand in my refrigerator to put together a spicy brown rice and lentil salad to contribute to the feast (pictured). I enjoyed two full plates of delicious food and delightful conversation with fascinating people.
How I learned about Plant Based Utah….
KRCL 90.9FM, Salt Lake’s Community radio station, is the media source I go to daily for music, news, community updates, entertainment, and events. During a KRCL Radioactive broadcast, I had heard Chandler being interviewed. The Universe aligned since I had been searching for a sense of community with plant-based followers outside of the virtual landscape. I am now a proud member of Plant Based Utah and welcome this chance to participate and make new friends.
