Spud Power - Day 1 of 10

Receive my December newsletter? You'll have read that December 11-21 I am taking on a spud challenge to increase energy, lose a few pounds, and feel better. Yesterday I spent time batch cooking and prepared mashed potatoes, mushroom gravy, roasted sweet potatoes & russets, plus baked a batch of tomato lemon Yukon golds. This morning I began the day with a hearty helping of crispy hash browns covered in hot sauce. Lunch is leftover lemon potatoes plus a green salad. I weighed in yesterday at 143.8 and expect to lean out a bit. Remember that even an extra 5 pounds puts 25 pounds of pressure on your joints.
